VANTIA RICOTTA SALATA “for grating” (Ricotte Pecorine Stagionate) with Red Pepper is a low-moisture, slightly salty/savory, cheese from Southern Italy made from the whey of Sheep’s milk. Ricotta means re-cooked and Salata means salted. Ricotta Salata is made from fresh ricotta that has been pressed, salted and aged for at least 90 days, the result is a very white, semi-firm cheese, ideal for grating and often used in salads or pasta dishes ! The added red pepper (Peperonata) gives this cheese a persistent-spicy flavor.
